The purpose of this research topic is the study of wineries through the years, focusing at the same time on the position of the visitor in this area. We study, how the wine production process from an open-air space is transferred to a building and acquires an industrial character with specific conditions and rules for its smooth operation and how this space welcomes the public. We observe, with the aid of examples, intense changes in existing spaces and study the design of the new spaces that are created, with the aim of a more complete experience for visitors. Tasting rooms, product sales, restaurants, exhibition areas and even guesthouses have become an integral part of modern wineries. Educational areas have been added to provide the public with both theoretical and practical information on the wine production process.
